I have not been getting enough veggies a day, so I had to think, how can I get more veggies in a day without having to cook, without having a lot of preparation, and something that would be so simple even I could do it. Well, G.B. turned me onto Sweet Potato's recently.
Since then I have been eating one a day. I don't even put anything on it like butter or sugar. It's fabulous all by itself.
They're great. All I do is....
1. Wash it
2. Wrap it
3. Cook it in the microwave for 3 minutes
4. Let it cool for 2-3 minutes
5. Eat

Super nutritious! Maybe I can make one for Nadia ... my non-vege eater. (Although I'm sure she'd dig it with a little butter and sugar on it.) :)
Yum. A good source of vitamins A, C, and B2. Fry them up as chips, they are awesome.
